Y3W: Leave Request Approved!

The best email I received this week was from my supervisor approving my request for Thursday and Friday off! Yep, including Monday (Labor Day) it's a five day weekend for me! I am doing it up right, too!

My mini vacay started by heading out to support our local baseball team, the Richmond Flying Squirrels, on Wednesday night! Beer and baseball sounds like a very relaxing time and I was excited that a bunch of my co-workers could come and hang out as well! I was also excited that everyone wanted to hold and meet Audrey which meant I got to be reaquainted with...beer!

I thought I'd take it easy on Thursday by 1. compiling everything I want to sell at my sister's yard sale on Saturday and 2. getting ready for our trip to the Zoo, but really, I just ended up watching Tangled on Demand with Vincent and... he loved it! Then, we had a dance party! Hey, I did do a load of laundry which is good because that means Vincent will have shorts to wear to the zoo...

Which brings me to Friday and Saturday... Zoo (read this post) and then a massive yard sale followed by relaxing by the pool (with drinks and babysitters? hint, hint) at my parents' house for the rest of the weekend!

Adobo Chicken - What's Cookin'

So, this week... I cheated! It's a recipe I have done before, but a.) it's not a regular weekly meal and b.) everyone keeps asking me for this recipe... so here it is: Adobo Chicken!

Here's what you need:


Ingredients:

8 Chicken thighs (you can also use chicken breast, or even pork - I prefer something with bone so the meat does dry out)
1 - 2/3 cups of Soy Sauce (I used lower sodium)
2 cups of water
1 green pepper
1onion
2 bay leaves
1 tablespoon of black pepper
1 tablespoon of garlic powder
1 tablespoon of lemon juice

This recipe is super easy! Combine all of your ingredients in a large pot (or crockpot) bring to a boil and then
let the liquid boil down for about an hour.

Before I started cooking, I let the chicken marinate for a couple of hours in the mixture. Here it is:

After letting it marinate, I added the chopped onion and pepper and let the cooking begin!

Sooo good! My hubby loves when I make this dish since it's a taste of home! Enjoy!

Planning a Very Spidey 3rd Birthday Party!

My son is OBSESSED with Spider-man.... OBSESSED! What 2 year old knows every single character from Spider-man?!?! That would be my son!

It all started when my husband decided that having a son of his own meant re-living his own childhood and with the luxury of modern day technology, all of the cartoons my husband grew up watching and loving are now at his fingertips. One thing he may have forgotten? To let our son age past two years of life before introducing him to the wonder that is Spider-man.... so, now we have a major fan on our hands. Like, such a big fan that the only shoes he will wear are Spider-man. Like, I have to tell him it's time to be Peter Parker in order to get him out of his Spider-man pjs!!

So, what theme do you think we are going with for his 3rd Birthday Party? You guessed it - The Amazing Spider-man!!!

Finally, I'm trying to think of a way to get my husband into a Spider-man costume... he is, afterall, the reason V is such a big fan!! Any suggestions?

We survived (and never lost power)!!!

It's the day after Hurricane Irene made her way through Richmond, VA and we survived! Actually, the hurricane gave us the perfect reason to hunker (I love that word) down in our house and be super lazy - don't judge! After traveling to Delaware and back in less than 24 hours and working 52ish hours last week, I deserved a day in my super fabulous yoga pants, spending quality time with the hubby and our children! And when I say quality, it truly was, because even though we never lost power completely (ducking and covering since most people I know still haven't gotten power back) the power flickered all day which meant.... no TV...

So what do you do all day with an almost 3 year old and no TV?

  • Have a sword and missile battle with koosh balls and a soft play sword
  • Bribe him to go poop in the potty (and he did it!)
  • Dump out every.single.toy on to the living room floor
  • Use a fishing rod to "fish" for said toys on the living room floor
  • Run out of ideas and leave him to his own devices
  • Stare out the window
  • Break down and watch cartoons using the laptop
  • Put the kids and yourself to bed early!
I hope everyone stayed safe and had a great indoor day. I hope the power comes back on soon for all of you who lost it!
